Summer is over and oregano is one of those Mediterranean spices which gives the perfect signature to the sunny season. Here in Hong Kong we are enjoying 27 degrees daily, can we still call it Summer? Why not? So let’s sprinkle organic dry oregano on a semi Chinese dish. For this delicious noodle based meal you will need:

boiled dry noodles
-
egg
-
loofa in chunks, skin peeled
-
good smoked ham in slices
-
oregano of course (i used organic dry)
-
salt, olive oil
Use the stir fried method starting with veg, then ham, then noodles and egg. Stir all the ingredients in the wok and sprinkle with oregano.
