Frittata on a bed of home made bread

This is a creation born out of the desire to combine carboes and proteins in one whole meal.  It was delicious and filling. I cooked it with  halogen oven which is the only oven available in my small kitchen.

INGREDIENTS:

  • eggs
  • cut of mixed veggies
  • milk
  • slices of bread
  • salt, pepper, herbs, spring onions
  • grated cheese

Beat the eggs with milk and dry plus fresh herbs/spices in a bowl. Aside start to prepare the dish for baking by arranging the bread slices  first on the bottom. Now place all the vegetables of your choice (here i used capsicum, onions and choy sam) on the bread and pour the batter all over. Finish with grated parmesan and place in the oven until golden and firm in texture.
