Vegetarian cod fish & capsicum rice ~ Riso al merluzzo vegetariano & peperoni arrostiti

The smell of peppers roasting directly on the flame of the stove is something special to me from home in Italy. Gramma would have roasted only red and yellow capsicum in the morning so to have all the time to let them cool and clean under running water before proceding with other recipes. Every time i have a nice fat pepper in my hand i am tempted to roast it that way! The flesh becomes soft and slimy and it s lots of fun scratching the black crust off its skin.

This rice requires only peppers and vegetarian cod fish which has been  steamed before cutting in stripes. A good stirring of both in fry pan with pinch of sugar, salt, soy sauce. A wonderful healthy treat ! Served with steamed sliced pumpkin dressed with drops of soy sauce.

I peperoni arrostiti hanno un profumo esclusivamente familiare per me e quando me ne ritrovo alcuni paffuti e polposi in cucina sono sempre tentata di arrostirli sul fuoco vivo. Vedere come si anneriscono, attendere che si raffreddino per poi scorticarli con le mani sotto acqua corrente e scoprire la polpa diventata ormai soffice e viscida. Potete a questo punto anche semplicemente condirli con olio e aceto oppure utilizzarli in un grande paninozzo ricco. Per questo riso occorrono comunque solo peperoni arrostiti a merluzzo vegetariano al vapore. Girate gli ingredienti in un wok con olio, pizzico di sale e zucchero, salsa di soya. Un riso pieno di aromi e salute!  Sevito con fettine di zucca al vapore condite con gocce di salsa di soya.
