The very first attempt. It’s easy when the fish is compact and flat, we used frozen sole after let it soften sprinkled with salt. Spread some basil pesto sauce on both sides of the fish; spread thin slices of apple plus some grated pecorino on the inside part.
Then add like three green leaves of a boiled vegetable (chinese flower cabbage in this case). Wrap it up, spread little butter on top and bake it for 30 minuts. Slice the roll and serve it with boiled greens, plane rice and a few mixed veggies in tempura style (taro & squash in this case).
