Pasta with almonds&zucchini ~ Pasta con mandorle&zucchine ~

You only need almonds and zucchini, all grounded,  for this refreshing and nourishing pasta. We ate the two versions cold and warmed up, both great, both dressed with olive oil.

Avete soltanto bisogno di mandorle e zucchine per rinfrescarvi e nutrirvi con questa pasta in versione sia riscaldata che all’insalata. E olio d’oliva per condire. 

  •  
    • Boil pasta in salty water, then strain
    • Steam (not too much,they dont have to be soft but just cooked) zucchini, 3/4 of which you will ground with almonds, 1/4 cut in square peaces
    • Stir the ingredients in the pasta with olive oil and lemon drops.
    • Bollire la pasta in acqua salata, poi scolare
    • Cuocere al vapore le zucchine (al punto da essere cotte ma non soffici), di cui 3/4 tritare con mandorleed 1/4 tagliare  atocchetti
    • Mescolare gli ingredienti con la pasta e condire con olio d’oliva e gocce di limone.
