Okra & carrots anyone? – Contorno di okra & carote

Maybe they would make  a perfect smoothie but i didnt go there yet. instead I just fryed okra tiny wheels in olive oil for quite a while. I love lady fingers and the market by the office sells them at good price so probably we’ll eat them very often in the near future.

“Asafoetida (Ferula asafoetida), is a dark amber resin which comes from the dried sap from the stem and roots of this wild fennel. The most commonly available form is compounded asafoetida, a fine powder containing 30% asafoetida resin, along with flour and gum arabic. It is mainly grown in Iran, Afghanistan, and Kashmir.

This spice is used as a digestive aid and in pickles. Its odour is so strong that it must be stored in airtight containers; otherwise, it spoils other foodstuffs. It loses its smell in cooking, however, and presents an onion-like taste.”

 

  • Okra e’ facilissima da presentare come contorno soffritto, si puo anche aggiungere una carota ben grattugiata verso la fine della frittura. Okra si puo tagliare in rotelline a soffriggere a lungo su una base di olio d’oliva, poca cipolla e un pizzico di sale e hing.Hing o asafoetida si trova nei negozi di derivazione Indiana, Afgana, Iraniana. E’ una resina scura che viene venduta in polvere in barattolini dove viene mescolata con farina e gomma arabica. fa molto bene alla digesione e rinfresca il corpo, proprio come la cipolla, infatti ha un aroma di cipolla. Non cucinata puzza e quindi deve essere imbarattolata ben chiusa per non diffondere il suo forte odore in cucina. In Italia se mangiamo abbastanza cipolla non abbiamo bisogno di hing.” 

what else we can do with okra & carrot stir fryed?

I made a couple of spring rolls to try and they were really tasty. maybe crumble feta cheese or paneer can be also added in them next time. Possono farcire involtini primavera e magari con aggiunta di mozzarella filante…

Moreover we had black rice with the cooked okra & carrot on the side. Also good.  Possono accompagnare del riso nero (ho usato una miscela di chicchi di varia origine integrale)…
