This is one of the most fulfilling and delicious breakfast you can have. It reminds me of when I was living in Colombia where this is a very typical morning starter at the table. Over there they serve it with arepas which I had to replace with a sort of chapati or simple flat yeast less bread made with atta flour and water.
For the SCRAMBLE you better have ready:
- Batter of a two fresh eggs
- lots of thin onion
- lots of tomato roughly cut the way you prefer
- salt, sugar, oil
I completed my breakfast with a fresh cut of papaya and a warm post-cough, nourishing Chinese herbs tea made from scratch the evening before. All in all it was a cozy and nutritive start of a day!
